Jalebi is a popular and savory North Indian sweet made from flour and flavored with sugar syrup. It is a perfect dessert for many festivals and occasions like birthday parties or family gatherings. This sweet dish is loved by people of all ages and tastes even more delicious when added to cold rabri. It can also be served as a late night snack along with samosas and hot masala chai. 1/2 cup of flour

1/2 cup thick sour curd
1 1/2 cups of butter
3/4 cup sugar
3/4 cup of water
3 lemon wedges
4 threads of saffron
1 tablespoon pistachios
1 tablespoon of milk
Step 1/5 Prepare the dough
In a large bowl, mix the all-purpose flour with the yogurt to make a smooth dough. If the curd seems too thick, you can add a little water, beat the dough for 5 minutes and you will see that it becomes homogeneous. Cover it and set it aside for a while.
Step 2/5 Prepare the Sugar Syrup
Take the sugar and water in a heavy-bottomed pan and heat it over medium heat. The syrup will begin to boil and the sugar will dissolve. Let it boil for about 15 minutes. You can add lemon slices or drops of milk to this syrup.
Step 3 / 5 Add Saffron
Collect the dirt that accumulates on top and discard it. Another benefit of adding milk or lemon slices is that it prevents the syrup from settling as it cools. Soak saffron in hot milk and keep covered for 5 minutes. Put saffron with milk in the syrup and reserve.
Step 4/5 Check the dough
Now check the dough and put some flour on it.
Step 5/5 Fry and serve
Transfer the batter to a piping bag and heat the ghee in a flat-bottomed pan over medium heat. Make jalebi by pressing the dough directly into the ghee in a round shape. Fry until cooked through on all sides or until golden brown and crisp. After removing them from the ghee, immediately dip the jalebis in hot sugar syrup. Soak them in the syrup for 2 minutes before serving. Garnish with chopped pistachios and serve hot.
